- 1 teaspoon turmeric
- 2 tablespoons coconut oil
- 3 tablespoons mayonnaise
- One jar Organic Citrus Infused Sauce or Organic Original Dipping Sauce – Hot or Medium


Preparation Notes
Breakfast bagels will take as long as you allow. You can be swift and use fresh ingredients minimizing what needs to be cooked or heated. Or, you can slow down and cook bacon or ham, fry or poach eggs, and cook other ingredients, too. Either way, we recommend pan frying the bagel. This gives your breakfast sandwich a nice crunchy interior that is still gentle on the roof of the mouth.
Think Thin Layers for Ingredients
When slicing ingredients we prefer to keep things on the thinner side. Layers of ingredients stack up quickly and while a ginormous bagel sandwich might make for a dramatic photo it isn’t very fun to eat. It will fall apart, burst at the seams, and make a mess. Think thin.

There is great variation you can provide your sandwich in the onion arena. Thinly sliced red onions are delicious added to your egg sandwich. Sweet onions sliced thinly are also a great addition to a breakfast bagel sandwich or any sandwich for that matter. Our favorite is to use caramelized onions. We sometimes make these in greater quantities and store them in the freezer. Then, we pull them and reheat the onions for the dish we’re making.
Do I use a Bagel or Bread in my Breakfast Sandwich
Bagel choices vary and which one is best really depends upon your preferences. We love garlic bagels, onion bagel, plain bagels, and everything bagels. But, really there isn’t a bagel we don’t like. The real question for breakfast isn’t as much about which bagel as it is about what if you don’t have any bagels? That situation could happen, especially if you want breakfast at 2am and the corner bakery isn’t yet open. This isn’t a problem. Use whatever bread you have on hand.
Ideas for Preparing Bagels for the Best Breakfast Sandwich
We suggest pan frying bagels in a little coconut oil. This adds a nice crunchy texture and the flavor is outstanding. If using bread we recommend pan fried bread in the same manner. As a general rule in our house we choose pan frying over toasting and toasting over plain. Warmer bread just seems better tasting unless it’s a cold tuna sandwich on a hot summer day pulled directly from the cooler while picnicking. But, for breakfast, yeah warm the bread. Grilling may be another convenient option if you outdoors
Which One is Better – Original or Citrus Sauce?
In this breakfast bagel sandwich recipe we used an Everything bagel with scrambled eggs, ripe tomatoes, cheddar cheese, and mayo mixed with Organic Original Dipping Sauce. If you use avocado then consider the Organic Citrus Infused Sauce. It pairs perfectly with avocado. Either of these sauces adds a nice flavorful heat that really make your eggs come alive. The Original Dipping Sauce and Citrus Infused Sauce are great with any egg dishes. We especially love these sauces in Frittata.


Breakfast Bagel Sandwich Protein Ideas
A breakfast bagel sandwich sans protein taste wonderful by itself. There is plenty of flavor. But, other variations for meat eaters include adding bacon, ham, lox, salmon or other fish, left over steak, etc. And, if you lean toward plant-based proteins considering adding tofu or tempeh bacon or sausage.
Instructions (this makes 2 breakfast bagel sandwiches with scrambled eggs)
- Beat eggs, salt and pepper in medium bowl until blended.
- Heat frying pan to medium heat, add coconut oil, garlic, stir and cook until garlic turns slightly yellow, add turmeric, basil, stir for 30 seconds, and pour in eggs mixture
- As eggs begin to set gently pull the eggs across the pan with a spatula, forming large soft curds
- Continue cooking – pulling, lifting and folding eggs – until thickened and no visible liquid egg remain (do not stir constantly).
- Remove from heat
- Slice bagel in half, spread on coconut oil and place on the hot pan face down for 3 minutes
- In a bowl mix mayonnaise with Organic Citrus Infused Sauce or Organic Original Dipping Sauce – Hot or Medium
Spread the mixture of sauce on bagel, top with eggs, cheese, and tomato slice. If you use any of the optional breakfast bagel sandwich ideas from above, e.g. protein, onions, avocado, then add those in before enjoying. Yummy!
