OVERVIEW
Salmon is already delicious. Add Chunky Dreamy Fresh Salsa as a relish to accompany salmon and it becomes extraordinary. It’s quick and easy to make. Share with others as an entree or serve smaller portions as an impressive appetizer.
Prep Time: Less time than it takes to cook your salmon
Ingredients:
- Salmon filets – one for each person
- 1/2 c onion, diced (we like sweet onion)(or, try mixing a variety of onions – red, sweet, yellow)
- 1 medium to large tomato, diced
- 1/2 avocado, chopped
- 1 tablespoon basil, coarsely chopped
- 1 tablespoon cilantro, coarsely chopped (if you’re one of those who doesn’t like cilantro, use basil alone)
- pinch of kosher salt for each filet
- pinch of black pepper for each filet
- 2-3 T Organic Citrus Infused Sauce – Hot or Medium
Instructions:
- Sprinkle salmon with a pinch of kosher salt and black pepper
- Debone salmon uses fish tweezers (don’t have any – add that to your kitchen list)
- Cook salmon over griddle, pan fry, or bake to your liking (if grilled brush with olive oil to prevent sticking)
- While salmon is cooking prepare Chunky Dreamy Fresh Salsa relish
In a bowl, combine ingredients to make relish
- Add onion, tomato, avocado, and chopped basil and cilantro
- Add Citrus Infused Sauce, start with 2 T
- Gently stir and add additional Citrus Infused Sauce to taste
To Serve, plate salmon with relish on the side rather than on top of the salmon (this makes it easier for guests, or you, to locate bones that were missed)
