Recipe Ingredients:
For Bacon-Wrapped Cream Cheese Stuffed Anaheim Peppers
- 6 Large Anaheim peppers or your preferred pepper (Hatch, Poblano, Jalapeno, Sweet Mini-Peppers, etc.)
- 1 8-ounce package (block) of cream cheese
- 1 Package of uncured (no nitrate) bacon, regular size – not thick-cut which would make it difficult to wrap
- 2 Tablespoons Organic Original Dipping Sauce– Medium or Hot [this is essentially a pepper onion garlic flavored sauce that adds flavorful heat to whatever it is mixed with]

These stuffed peppers will take 55 minutes to make from start to finish. Like a fine wine, this isn’t one to rush.

Recipe Instructions – How to Make Bacon-Wrapped Cream Cheese Stuffed Anaheim Peppers
- Prepare Peppers
Get a head start on the baking and preheat the oven to 375 degrees F. Next, wash Anaheim peppers and dry with a paper towel. Cut peppers lengthwise in half and remove stem and seeds. Warning: If using jalapeno peppers or other hot peppers it is a good idea to wear gloves and don’t touch your face lips, eyes, or mouth while you prepare the peppers.
- Prepare Cream Cheese Filling
In a mixing bowl large enough for the cream cheese mix together well, 2 Tablespoons of Organic Original Dipping Sauce and the block of cream cheese. Taste for your preferred heat level. If you want a bit more heat then add more sauce.
- Fill Anaheim or your Preferred Peppers
Using a spatula or small spoon, scoop spicy cream cheese filling into each hollowed-out pepper, filling it flush to the top.
- Wrap Anaheim Peppers with Bacon
Using a single strip of raw bacon for each pepper, begin wrapping from either the stem or tail end and continue wrapping until you reach the other end of the pepper. Hopefully, you perfectly pace your wrap to finish the bacon by the time you reach the other end of the pepper. Keep the wrap tight. If you pepper is small then you can either double back or use a partial strip of bacon.
- Bake and Wait
Line a cookie sheet with foil. Place the bacon-wrapped stuffed peppers on the foil leaving plenty of space in between peppers. Slide into the oven and bake for 45 minutes. Check periodically for bacon spatter and to tease yourself with the delicious smell. The peppers are done when the bacon is golden brown and completely cooked. The cream cheese will be slightly browned on top. You are in for a treat!
